Zucchini Ginger Muffins

About the Recipe

Ingredients

  • 2.5 cups organic oat flour

  • 2 bananas

  • 4 large eggs

  • 1/2 cup pure maple syrup or maple sugar or honey

  • 1 cup shredded zucchini

  • 1/2 cup walnuts (can be omitted)

  • 1/2 nub fresh graded ginger

  • 2 tsp vanilla

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 3 tsp cinnamon

  • 1/2 tsp nutmeg


Preparation

Step 1

Preheat Oven to 325 degrees


Combine all wet ingredients (eggs, bananas, maple syrup, ginger, zucchini & vanilla) mix well.



Step 2


Add each of remaining dry ingredients stirring until well combined.



Step 3


Scoop the batter evenly into a lined muffin pan. Bake for 35 minutes or until lightly browned. Insert a toothpick into the center of the muffin to check that it comes out clean. Cool & enjoy! Store in an airtight container to maintain freshness.
