Ingredients

Cobbler

  • 4 cups Strawberries, blueberries, raspberries, cherries or blackberries **Use your favorite combination of fresh or frozen.

  • 1 cup of almond flour

  • 1 tsp of vanilla extract

  • 1 tsp cinnamon

  • 1⁄4 cup coconut oil + more to grease pan (melted)

  • 1⁄2 cup of honey, maple syrup or maple sugar

Coconut Whipped Cream

  • 1 13.5 oz can of coconut cream (best brands are Whole Foods, Thrive, Native Forest, Savoy or Aroy-D)

  • 1⁄4 cup of maple sugar

  • 1 tsp vanilla

Preparation

Step 1


Open can of coconut cream, place in freezer safe container at least 2 hours before making cobbler.


Preheat oven to 375 grease an 8x8 inch baking pan with coconut oil. Add berry combination in baking dish.


Step 2


In a medium mixing bowl combine almond flour, maple sugar, coconut oil, vanilla & cinnamon in a bowl and mix until it forms a crumbly consistency.


Step 3


Evenly distribute topping over the berries. Place baking dish in oven and bake until topping is golden brown. 20 minutes for fresh berries and 30 minutes for frozen.


Step 4


Coconut Whipped Cream: Place all ingredients in bowl, whip on high until whip cream forms. Place in refrigerator to further thicken.


Once cobbler is cooled serve in individual bowls, top with coconut cream.
