About the Recipe

There is nothing better than finding a salad that checks all the boxes. These flavors literally erupt in your mouth and friends and family will beg you for the recipe.

Ingredients

Dressing

  • 1⁄2 cup extra virgin olive oil

  • 3 tbsp Dijon mustard

  • 3 tbsp local honey

  • 2 tbsp apple cider vinegar

  • 1 tea ground cinnamon

  • Pinch of Himalayan sea salt & pepper to taste

Salad

  • 1 bunch of kale leaves, stem removed rolled & sliced into bite sized pieces

  • 1 can of cooked chickpeas, rinsed & drained

  • 1⁄2 cup blueberries

  • 1⁄2 cup raspberries

  • 6 strawberries, sliced

  • 2 peaches, sliced

  • 4 tbsp hemp seeds

  • 1⁄2 cup sliced almonds

Preparation

Step 1

Combine all dressing ingredients into a high speed blender and blend on high until smooth. Add a pinch of salt and a bit of pepper, taste the dressing, then add more salt & pepper to taste.


Step 2 Make the salad: Make in one big bowl or divide into 4 individual containers. Add all of your fruit toppings. Finish the salad by topping with the seeds & nuts as those are lighter and need to be on the top. Drizzle your amazing dressing over everything. Enjoy!
