Cinnamon Apple Streusel Muffins

Ingredients

Streusel

  • 1/4 cup aloud flour

  • 2 tbs coconut oil, solid

  • 3 tbs maple sugar (Thrive)

  • 1 tbs ground cinnamon

  • 1/4 tsp cardamom

  • pinch of Real salt

  • 1/4 cup chopped walnuts

Muffins

  • 1 cup almond flour

  • 1/4 cup cassava flour

  • 1/3 cup tapioca flour

  • 1 1/2 tbs ground cinnamon

  • 1 tsp Real salt

  • 1 tsp baking soda

  • 4 large eggs

  • 1/4 cup almond milk (Malk)

  • 2 tsp vanilla extract

  • 6 tbs maple sugar

  • 2 medium apples, peeled & diced

  • 3 tbs coconut oil, melted

  • 1 tbs fresh lemon juice

  • 1/3 cup chopped walnuts

Preparation

Step 1


Preheat your oven to 350 degrees. Line muffin pan with unbleached parchment muffin liners.



Step 2


Prepare the streusel: In a medium bowl combine all dry ingredients (except walnuts) until well mixed. Add in coconut oil and combine until mixture looks like crumbs. Add in walnuts. Place in fridge.



Step 3


Prepare the muffins: In large bowl combine flours plus cinnamon, salt, and baking soda.


Wisk in eggs, almond milk, vanilla, maple sugar, apple, coconut oil, and lemon juice until well combined. Stir until no dry flour spots are present. Add in apple and walnuts.



Step 4


Using a scoop transfer batter evenly to muffin pan. Sprinkle streusel on the top of each muffin adding until mixture is gone.


Bake for 20-25 minutes until toothpick comes out of a muffin center clean.
