Chipotle Burrito Bowls

About the Recipe

Once cooking is complete its time to assemble the bowls. I always pull out Siete tortilla shells and a bag of organic tortilla chips so everyone can make their own taco or nachos if desired. I pull out my big bin of organic greens, site jalapeño sauce, and thrive medium salsa. My bowl usually becomes a salad. Whatever way you build your bowl this recipe collection will become a favorite.

Ingredients

Instant Pot Black Bean Recipe Ingredients: 1 lb of dried black beans 1 small yellow onion diced 4 garlic cloves minced 1-2 tbs avocado oil 1 tsp salt 1 tsp cumin 1⁄2 tsp black pepper 2 bay leaves 5 cups of water 5 tbs organic roasted chicken better that bullion


Cilantro Lime Rice Ingredients: 2 cups of rice made according to package instructions 1-2 tbs olive oil 1⁄2 bunch of fresh cilantro chopped 2 tsp salt (to taste) 1 lime juiced


The BEST Chipotle Protein Ingredients: 2 lbs of organic grass fed ground beef or organic chicken (chopped) 1 tbs chili powder 1 tsp garlic powder 1 tsp onion powder 1⁄2 tsp oregano 1⁄2 tsp paprika 2 tsp ground cumin 1 tsp salt 1 tsp pepper 2 tbs avocado oil 1 (14.5) oz can of organic fire roasted diced tomatoes


Guacamole Ingredients: 3-4 avocados 1 tbs olive oil 1⁄2 jalapeño diced 1 diced vine ripened tomato

1⁄4 red onion chopped

1 garlic clove diced 1 lime juiced 1 tsp salt 1⁄4 tsp pepper 1/2 bunch fresh cilantro chopped

Preparation

Step 1

Prepare Black Beans first.

Bean Instructions:

  1. Start Instant Pot on sauté setting

  2. Cover bottom of pot with avocado oil, add in onion & garlic, stir frequently to prevent burning, about 3 minutes until fragrant and transparent.

  3. Add beans, seasonings, water and chicken bullion.

  4. Secure lid and cook on high pressure for 40 minutes (or use bean setting).

  5. Let pressure release for 10 minutes

  6. Remove bay leaves, taste and add additional salt & pepper to taste.


Step 2

Prepare cilantro lime rice second.

Rice Instructions:

  1. Cook rice according to package instructions in a pan.

  2. Once rice is cooked though add in all ingredients.

  3. Taste and add additional salt & pepper to taste.


Step 3

Prepare chipotle protein third.

Protein Instructions:

  1. Using a large sauté pan, add avocado oil and let warm for 1-2 minutes.

  2. Add in protein, using a spatula keep turning the meat until browned and cooked through

  3. Add in seasonings and diced tomatoes.

  4. Let cook on medium heat for 6 minutes

  5. Taste and add additional salt & pepper to taste.


Step 4

Prepare Guacamole fourth.

Guac Instructions:

  1. Cut and remove pits from avocados, place in medium bowl. Use fork to smash avocado still leaving a chunky consistency.

  2. Add in jalapeño, onion, olive oil and garlic. Mix well

  3. Add in lime, tomato, salt & pepper.

  4. Chop cilantro and fold into mixture.

  5. Taste and add additional salt & pepper to taste.
