Carrot Cake Oatmeal Cups

About the Recipe

Ingredients

Wet ingredients:

  • 1 1/2 cup matchstick carrots

  • 1 banana

  • 2 tbsp chia seeds + 3 tbsp of water (equal to 2 eggs)

  • 1 cup coconut milk (canned)

  • 1 tbsp fresh ginger, grated

  • 1⁄4 cup pure maple syrup

  • 1 tbsp coconut oil

Dry ingredients:

  • 2 cups of gluten free organic oats

  • 1 tsp of baking powder

  • 2 tbsp cinnamon

  • 1⁄4 tsp Himalayan sea salt

  • 1⁄2 cup unsweetened shredded coconut 1⁄2 cup of raisins

  • 1/3 cup or walnuts

Preparation

Step 1

Preheat Oven to 350 degrees


Make chia seed "eggs". Combine chia seeds and 3 tbs of water and let set for a few minutes.


Step 2

Mix all wet ingredients until smooth and well combined.


Step 3


Add each of remaining dry ingredients stirring until well combined.


Step 3


Scoop the batter evenly into a lined muffin pan. Bake for 25 minutes or until lightly browned. Cool & enjoy! Store in an airtight container to maintain freshness.
